PARISIAN STYLE CHICORY
8 medium chicory, 8 small slices of smoked bacon, 20 grams of mushrooms, 2 tablespoons butter, 1 tablespoon oil, juice of half a lemon, 1 bunch of parsley.
Carve noodles from chicory(with the tip of a knife) . Slowly fry chicory on half the butter and oil, until she will be golden brown. Add sliced mushrooms, salt and pepper. Cover and simmer 50 minutes. over low heat. For 5 min. before the end of suffocation, fry smoke bacon peeled from the fat on the rest of butter. Put chicory into dish. Drizzle with lemon juice, put smoked bacon and Sprinkle finely chopped parsley.
