Ingredients:
4 hard-boiled eggs,
1 chicory,
1 avocado,
yoghurt,
parsley,
oregano,
salt and pepper,
Preparation:
Remove leaves from chicory and cut into strips or tear. Peel the eggs and avocado and cut them into cubes. Chop parsley. Mix all ingredients in a salad bowl and season to taste by adding oregano salt and pepper. Add yogurt and mix gently. Serve with whole chicory leaves or on chicory boats.
Chicory is a vegetable belonging to the family of biennial salad plants. It forms elongated white- yellow heads with characteristic refreshing bitter taste. We can make raw salads from it, and also tastes great on hot.
