Creamy soup with cream

4 large chicories,
medium onion,
small leek,
stalk of celery,
2 tablespoons of butter,
1 tablespoon of flour,
1l poultry broth,
half a glass of sour cream,
chopped parsley or dill,


Wash the chicories ,cut out the interior. Leaves cut finely. Chop the onion. Cut the white part of leek and celery stalk into slices. Pour on butter the prepared ingredients in a saucepan, pour over the hot broth. Cook covered for about 30 minutes. Then mix the soup, season, mix with cream and warm up, but do not cook. Serve with croutons and parsley.



Chicory is a vegetable belonging to the family of biennial salad plants. It forms elongated white- yellow heads with characteristic refreshing bitter taste. We can make raw salads from it, and also tastes great on hot.
